B6 – Wort Cooler

The hot wort is cooled to fermentation temperature in a plate heat exchanger. During this process, cold water is heated in counterflow and reused in the next brew – a sustainable process with minimal energy loss.

B7 – Fermentation Tank

Primary fermentation takes place in our cylindroconical stainless steel tanks. Our in-house pure-culture yeasts convert the wort into alcohol, carbon dioxide, and a wide range of aroma compounds. For Tannenzäpfle, we use bottom-fermenting yeasts; for Weizenzäpfle, top-fermenting yeasts. The yeasts are cultivated in our own brewery laboratory and additionally preserved at the Weihenstephan Research Center.

B8 – Storage Tank

After fermentation, our beers mature for several weeks at low temperatures in our storage tanks. This lagering process gives the beer clarity, harmony, and balance – time we are happy to give our beer.

B9 – Filtration

The beer is filtered until brilliantly clear, removing yeast cells and haze particles. This results in crisp, slender beers such as our Pils. Other styles, such as Weizenzäpfle, Weizenzäpfle Alcohol-Free, or the naturally cloudy Schwarzwald Zäpfle, are deliberately left unfiltered and retain their full character.

B10 – Dealcoholization

For our alcohol-free beers, we use a two-stage dealcoholization system with aroma recovery. This allows the typical beer flavor to be largely preserved while the alcohol is gently removed.
